Risk Assessment for Odour in Kitchen Extracts
The Risk Assessment for Odour is scored by ranking an establishment using the following form. By using this form in conjunction with the industry guidance, system designers can obtain odour control equipment suggestions based on their score. With this information and a duty airflow, Airclean will assist you in creating a specification for your Kitchen Exhaust Odour Control System.
We have assessed your odour control needs as Low to Medium
Low to medium level control may include:
Fine filtration or ESP following by carbon filtration (carbon filters rated with a 0.1 second residence time)
Fine filtration followed by counteractant/neutralising system to achieve the same level of control as 1
We have assessed your odour control needs as High
High level odour control may include:
Fine filtration or ESP followed by carbon filtration (carbon filters rated with a 0.2-0.4 second residence time)
Fine filtration or ESP followed by UV ozone system to achieve the same level of control as 1
We have assessed your odour control needs as Very High
Very high level odour control may include:
Fine filtration or ESP followed by carbon filtration (carbon filters rated with a 0.4 -0.8 second residence time)
Fine filtration or ESP followed by carbon filtration and by counteractant/neutralising system to achieve the same level of control as 1
Fine filtration or ESP followed by UV ozone system to achieve the same level of control as 1
Fine filtration or ESP followed by wet scrubbing to achieve the same level of control as 1
The above text is taken from “DEFRA”-Guidance on the Control of Odour and Noise from Commercial Kitchen Exhaust Systems” prepared by Netcen on behalf of the Department for Environment, Food and Rural Affairs, January 2005.
Maintenance must be carried out to ensure these performance levels are always achieved.
Expert advice should be taken from Odour Control Equipment manufacturers or Kitchen Extract Design Specialists, to ensure the best practical odour control solutions are included in a system design.
Airclean supply and manufacture Odour Control Equipment to suit all instances suggested by this guidance, and can assist restaurateurs, consultants, and kitchen extract design and installation engineers in making the right selections.

Thank you.
To help provide guidance on the type of equipment needed to prevent nuisances from odour, smoke, and excess grease in a kitchen extract, we an odour risk assessment. This assessment considers four key factors—Dispersion, Proximity of receptors, Size of kitchen, and Cooking type—to generate a score and recommend a level of odour control.
Based on this level and industry guidance to suggest nuisance control equipment and specify contact times for activated carbon filtration to appropriately remove odours from your kitchen.
Completing an Airclean odour risk assessment will send the information you provide to our technical team. They will then be able to give you a score and a recommended level of odour control for your kitchen.
Using either the provided airflow volume or the face velocity method for your canopy size, Airclean aims to quote the kitchen extract filtration equipment needed to meet the industry guidance.
This assessment provides a basis for a solution, and the technical team aims to process it within 24 hours.
